The Appetizer:
TOMATO-ZUCCHINI Nibbles (calorie)
2 doz. Cherry tomatoes, ¾ cup chopped zucchini, ½ cup low-fat cottage cheese, 1 tsp. chopped chives, ¼ tsp. Garlic, salt.
Cut small slice off the bottom of the cherry tomatoes, so it is set flat. Cut thin slice from the top of the tomatoes. Scoop out the centers of the tomatoes with a melon spoon. Sprinkle with tomato and garlic, salt. In a medium bowl, combing Zucchini and cottage cheese with aboutTeaspoonful for each. Garnish with chives.
The Soup:
ZUPPA PAVESE
1 qt. Chicken broth, 4 slices of bread-1 / 2 inch thick - and roasted with butter, 4 eggs, ¼ cup grated Parmesan cheese.
Heat chicken broth. Place slices of toast with butter, heat-resistant bowl of soup. Break an egg on each slice. Pour broth into bowls, without the yolk. Set cups in the oven to 350 degrees and cook until the egg whites are firm. When complete, sprinkle with Parmesan cheeseCheese.
The main dish:
CHICKEN CACCIATORE Maddelena
1 3LB. Chicken pieces serve sliced, 1 / 3 cup olive oil, 1 small chopped onion, 1 tbsp. chopped parsley, 1 tbsp. chopped celery, a pinch of salt and pepper, 2 small bay leaves, ¼ tsp. Rosemary, 1 cup dry white wine, 2 tbsp. Wine vinegar, 1 clove garlic, chives.
Place the onion, parsley, celery, garlic and oil in a frying pan. Saute on low until onion is golden brown. Add the chicken pieces. SprinkleSalt and pepper and brown on all sides. Add bay leaves, rosemary, wine and vinegar. Cover and cook for about 40 minutes. Add a little water.
Bread:
BUTTER LOGS
2 cups all-purpose flour, 2 tbsp. toasted sesame seeds, 1 tbsp. Sugar, 2 ½ tsp. Baking powder, 1 tbsp. Sugar, ½ tsp. Weinstein, ½ tsp. Salt, ¼ cup shortening, 2 beaten eggs, ½ cup milk, ¼ cup melted butter.
Place in a bowl, no flour, sesame seeds, sugar, baking powder,Cream of tartar and salt. Cut in shortening until mixture looks like coarse crumbs cookie. Combine eggs, milk and all the flour mixture. Stir until dough clings together. Knead on lightly floured board with about 12 strokes. Pat dough into a 10x6 inch rectangle. Cut with a floured knife, remove the dough in half lengthwise. Then cut each half crosswise into 8 sticks (1 ½ x 3 inches). Place 1 tbsp. Butter in a 13x9x2 inch pan and spread them around. Place sticks in the pan and brush with the remainingButter. Bake at 425 degrees or until light brown. For 16 logs butter.
Dessert:
CANTALOUPE ROMANA
2 ripe melon, ½ cup Marsala or (at your option) for wine, ½ cup maraschino liqueur, 1 qt. Vanilla ice cream.
Cut melon in half and remove seeds. Prick the inside of the melon with a fork and pour in the wine. Chill until it is cold watermelon. Place ice cream in the center and sprinkle maraschino liqueur on ice.
