Award Winning Italian Meatballs

Here is a recipe for Italian meatballs, who helped win a cooking contest that I entered. The prize for the winner was a limousine for the night with friends and family and a trip to San Francisco to an excellent Italian restaurant called Fior d'Italia. If you have a recipe for a dish that loves you, you might consider a cooking competition. There are thousands of cooking competitions around the United States.

Some of the winners will receive cash, prizes or her own cooking show on television. TheFood Network TV channel is always a casting for the competition. Check out their web site for; The Next Food Network Star competition.

Here is my Italian meatball recipe. The recipe that called the award "rigatoni pasta with meatballs and Raisin Portabella mushrooms covered with a fresh tomato-Marsala sauce."

Chef Vinny's Italian meatballs

2 kg minced meat (diet or regular) do not lean

2 tsp salt or more if you want

3 large garlic clovesCloves garlic chopped

4 eggs

1 teaspoon chopped basil dry

½ tsp dried oregano, minced

½ teaspoon black pepper

¼ cup fresh chopped parsley

¼ - ½ cup plain bread crumbs

¼ cup freshly grated Parmesan or Romano cheese

(Optional) ¼ cup raisins make great tasting meatballs!

Mix all in a large bowl with your hands and form meatballs. Place on a baking sheet and bake at 350 degrees for 15-20 minutesor until they become firm and lightly browned. Do not over cook.

When you're done, leave all the meatballs in your favorite pasta and tomato sauce and simmer over medium heat and cook until the meatballs are all the way through. Serve with your favorite pasta. Enjoy!
